The Best of Bon Appetit: Curried Turkey Salad in Brioche (1979)

I made this dish back in February for a mobile meal at Boordy Vineyards. We are members of their Landmark Club. One of the perks of being a club member is the seasonal release parties. You go and taste the wines that are in that quarter’s selection. There is music and a big cheese bar. There is a food truck but the majority of people bring picnics.

How ever many years ago we discovered that our friends, Sean and Emily, are also members, so now we coordinate when we go and what we’re going to bring for dinner.

My selected dish is from The Best of Bon Appetit (1979)

The brioche in that picture is so lovely! I bought a pack of brioche buns, cut off the tops and then mushed down the center to form a cavity.

I also used chicken because I didn’t have any turkey.

I loved this sandwich.

I love chicken salad. Especially curry chicken salad.

I also roasted some beets. Sean and Emily brought chicken wings and potato salad.

It was a delightful dinner.

They also brought with them a birthday present for me:

That is a sequined Nicolas Cage pillow. Amazing, yes?

More amazing? Another friend bought me the EXACT SAME PILLOW for my birthday.

So now when I look to my couch I am met with General Tom Selleck, Sequined Nic Cage (x2), and Brian Boitano the cat.

I don’t think I have enough couch pillows. Ha!

  2. The cat with the bloody knife is my favorite pillow. (I’m still giggling!)

    I absolutely love curried chicken salad. I’ll sometimes use the super-duper firm tofu from Trader Joes too. My recipe is almost identical to yours; I’ll sometimes add currants/raisins and pistachios. I’ve never had it on brioche — gotta try that. I’ll bet it takes it up several notches.
