The Joys of Jell-O: Lemon Pudding Squares (1981)

This is the second “preview dish” for the upcoming 182. Liver ‘N Onions. And it’s the second one featuring Jell-O for National Jell-O Week!

Here is the menu from 182.

Earlier this week, I presented the Sunset Salad that subbed for a Perfection Salad and here is Lemon Pudding Squares, taking the place of the Cherry Cheesecake.

This recipe comes from the 1981 edition of the Joys of Jell-O.

I picked this one because the presentation reminds me of the Cherry Cheesecake on card 182.

I also picked this one because my mum already had lemon Jell-O and lemon pudding in the cabinet, and we already had a berry mix on hand. 

Simple enough, right?

Well, except for the fact that I tried to fold the egg whites into the hot mixture instead of the other way around.

But I fixed it by whipping the hell out of it in the stand mixer.

In the end, it worked just fine and had the consistency that I imagine the authors of the Joys of Jell-O had intended.

Final result:

It was fabulous.

  1. I think they made some seasonings and also nutritional supplements. I was only 4-5 at the time, so it’s hazy. I wish he was still around so I could ask him. He was a pharmacist and by the time I was in grade school, he had sold the company and gone back into pharmaceutical research, which is where his passion was. I was sad that I couldn’t go to the production area any more and watch the machines making the products.

  2. This sounds like a really tasty and refreshing dessert, especially for summer. Ah, Jello and all the memories it brings back…my dad actually had a small food company in Iran when I was little, and one of the things it produced was a version of gelatin dessert. I remember seeing it at the store and being in awe that my dad made it.
