Benson & Hedges Entertaining With Style: Eggs Blackstone (1980)

We made it to New Year’s Eve!

Although the manner in which you ring in 2021 may be different than in years past, that doesn’t mean you can’t drink like you’re out at a party!

And if you drink like you’re out at a party, you might need a little something to nurse your hangover the next day (New Year’s Day is National Bloody Mary Day, after all).

Firstly, I recommend you visiting my Bloody Mary Bar for a variety of different recipes. Secondly, you may want to try Eggs Blackstone.

This dish is from one of my most favorite cookbooks.

Eggs Blackstone was created at Perry’s in San Francisco.  (I did the research, Perry’s opened in 1969. It is still in operation and is now a mini-chain with two other locations).

Eggs Blackstone is a riff on a classic Eggs Benedict. It has the poached eggs, English muffins, and Hollandaise sauce. The difference? It’s crumbled bacon instead of ham and a tomato slice is added.

This Hollandaise was much more successful than my last attempt (185. Eggs Benedict).

I liked the addition of the tomato. It mixed nicely with the Hollandaise and egg yolk to soften the toasted English Muffin and kicked up the umami.

So this was very good. And I think something I’d consider making occasionally.  I rarely have Canadian Bacon in my fridge, but bacon? Sometimes I have both turkey and pork in the meat drawer.

  • That was such a sweet moment between sweet Margot and your beloved Brian. 😻 One of my favorite eggs bennie versions is with tomato and avocado replacing the bacon (or in addition to it).

    And the B&H people must have been smoking some of that wacky tobacky -- that is not a papaya.
