Impossible Pumpkin Pie (1981)

Did you have a nice Thanksgiving–whatever version of Thanksgiving you had last week?

Mine was very nice. Due to the global nightmare otherwise known as The COVID, Mr. Sauce, Esq. and I opted to stay home and not travel to see our families.

So it was an undoubtedly a smaller affair, yet, I still entertained for the two of us as though we were having guests.

Scaled back Snicky Snacks for two

I planned the standard menu, mashies, stuffing, gravy, sweet potatoes. But this year I decided to add on some collards with ham hocks, and, per Mr. Sauce’s request, penne with vodka sauce.

I guess it’s a New Jersey Italian thing to add on some a la carte pasta.

I told my mum that we’d be eating chicken for an entire week and she said “it’s only a 6 pound chicken!” Well, we have already eaten leftover dinne twice and there is still a sizeable amount of chicken, yams, and collards left. I may toss the leftover sides, but there is a very good chance that there are Turkey (Chicken) Devonshire Sandwiches in our future.

Anyhoo, there is one irrefutable fact about Thanksgiving, and that’s Thanksgiving isn’t Thanksgiving without a pie!

Well, I didn’t buy a pie. And I wasn’t too keen on trying a homemade crust, so I did the next best, laziest thing, The Bisquick Impossible Pumpkin Pie.

A little blitz in the blender, poured into a pie plate, the Bisquick mix does the trick.

No, it didn’t create its own crust. But it was baked in a pie pan, hence it qualifies as pie.

And good pie, too. Mr. Sauce ended up finishing it off before I even realized it.

Now, what Impossible Pie should I try next?

  1. The appetizers look inviting, especially the shrimp cocktail + baked clams! I love the dining table turkey centerpiece + brown stoneware. It’s not Thanksgiving in my family without lasagna. Pie is pretty awesome too. Though am done roasting turkey, for good. Chicken, ham, even duck- ok. Am over turkey entirely.

  2. I’m impressed! The snicky snacks and pie look exceptionally delicious.

    We ordered a “heat-and-eat” from the supermarket and still didn’t get around to doing anything with it until Friday. If hubby doesn’t want any more turkey, it’s going into the freezer tonight — I’m starting to grow feathers.

    1. Yep. You blend it all together and a crust is created while the ingredients settle and bake. some of the other recipes I’ve tried do have more of a crust. This one just didn’t do it at all.
