140. Roast Chicken with Apple-Onion Gravy

SPOILER ALERT: This is one of the best DiS1972 cards I have ever prepared.

DiS1972 says that this dinner takes 2 hours and 10 minutes. Lets see if those bitches over at Marjon Promotions were lying.

I took notes!

3:50 oven was already on to pre-heat.

The center of the whole chicken is still frozen. It needs to defrost more. I just put the whole chicken in a pot of cold water in the sink.

4:10 still waiting for the oven to hit 350. Cutting carrots while waiting.

Putting the carrots in the dish to glaze in the microwave.

4:20 CHICKEN IN!

4:25 Going to make gravy to be ready in 1 hour.

FRESH ROSEMARY–planning on going in deep with herbs.

4:33 onion is cooked. Other ingredients added. Will simmer in next step.

5:20 timer off. Time to make gravy.

5:30 chicken back in oven. temp a little low. Going to set timer for 40 minutes and check.

6:14 chicken temp a little under. Starting all sides (microwaving carrots and making instant mashies)

6:26 chicken done. Resting. Swap out carrots and nuking green beans. 

6:35 Dinner is Served!

Late. Dinner is Served late. 35 minutes late. But who cares–this was a seriously good chicken.

In the future I would add a roux the gravy to thicken it and I would puree the chopped onion to be the same consistency as the applesauce. But still–I’m so shocked that the gravy kinda stuck to the chicken the way it did in the photo.

I 100% recommend this chicken. the gravy was excellent.

I had the leftovers the next day and was blown away how moist the white meat was reheated. I wonder if using the Nature’s Choice chicken instead of regular ol’ Perdue had anything to do with it?
