123. Eggplant-Hamburger Sandwich!
I’ll tell ya, this was a bit of a surprise. Based on the social media feedback, I really thought that Frosted Meatloaf was going to take it, but a last-minute surge put No. 123 over the top.
Which was fine–I already had an eggplant because I was planning on making Eggplant Parmesan. If you look at the recipe it isn’t too far off:
Well, except for all of that added ground beef.
So of course I had to, in these challenging times, make a few changes to the dish. But I really didn’t have to do any major alterations.
I had Rice Pilaf-flavored Rice a Roni, eggplant, and ground beef–although, the package from the butcher said ground turkey, it most definitely was NOT ground turkey. I don’t know what happened there, but it didn’t bother me much.
I added “pizza seasoning’ to every element of the eggplant. The flour I dredged it in, the ground meat, the tomato sauce. And we didn’t have mozzarella so I subbed some provolone.
I didn’t bother with the salad (I did not have cucumbers–and even if I did have cucumbers, I do not like cucumbers in sour cream). Nor did I bother with the garlic bread or the Pears au Chocolate. But since those 2 items are not in the photograph, that was no big loss.
So, how was it?
It was fine. It was a little dry, hence the sauce on the side. I think that this could be modified into a pretty good layered casserole thing–with cheese and sauce in between the layers.
Overall: completely non-offensive. And good enough that we ate the leftovers for lunch the next day.

P.S. I thought that the Frosted Meatloaf was going to win big so I already made it before voting had ended. Ha! So, that’ll be up on the blog soon.
That eggplant dish really looks good. I think this is one that I will try.
This actually looks pretty good. I can totally see it as a casserole. I do a “cheater” eggplant parm casserole that just uses raw eggplant slices alternating with cheese and sauce. Super easy and really tasty (can’t say no to baked cheesy goodness).
I think I voted for the spaghetti one in the lower right hand corner, but I don’t remember. They all deserve a moment to shine on your blog.
