Time-Life Foods of the World: New Mexico Style Stacked Cheese Enchiladas (1971) & Guacamole (1968)

Another dish from earlier in 2019–I couldn’t even tell you when.

But I will tell you that this here is the easiest and tastiest guacamole recipe ever, and the one that I will be using from now until the day I die.

No garlic. No lime. No cumin nor red pepper flakes.

I do suggest a little extra salt (and a squeeze of lime, if you have it on hand), but I have made this with dried cilantro flakes and it’s still really, really, good.

Now for some enchiladas!


Recipe for Stacked Cheese Enchiladas

I picked this enchilada recipe because I had a bounty of veg from Imperfect Foods including tomatillos and Padron peppers (so I didn’t have to use canned). salsa verde cooking on stovetop in potStacked enchiladas with sour cream, guacamole, and iceberg lettuce

Cheese? Good.
Tomatillos? Good.
Chiles? Good.

Good stuff. With those avocados, jalapenos, and ilme all up in there, I’m gonna be making this awesome guacamole again this week.

Tonight I am going to make the Italian classic escarole and beans.

  1. I make guacamole just like that recipe, but I HAVE to add garlic and lime to it. Can’t hang with guac if it hasn’t got garlic. My house is in a similar state of messiness, but like you, the kitchen is always clean. Because I can’t stand a dirty, messy kitchen.
    Imperfect Foods is such a good idea.

  2. I too am impressed by the cleanliness of your hob (as we call it here in the UK) mine is absolutely FILTHY. Still, I can’t complain that I don’t have time to clean it at the moment as here in London, like you, we are all confined to barracks. There is a small possibliity that I can get a grocery delivery order this week and I WANT ENCHILADAS. Even though, to be honest, I am not really sure what an enchilada actually is. I want some kind of Tex-Mex feast for one though. I will start hatching a plan.

    1. Yes, you need enchiladas.
      OMG, my apartment is so filthy. We’re working from home and so as soon as 4 comes around, and I’ve been in the house all day, the last thing I want to do is start cleaning it. The kitchen is the one room that is always clean. And I have been doing a lot of laundry.
      And again–congrats on your wedding. I was so delighted by the news!

  3. I second the vote for that series of cookbooks – it’s outstanding. Like Marty, I sold mine years ago and wish I hadn’t. The pork chops recipe in the Italian spiral bound companion book also great! Don’t recall the name, but there’s garlic, wine and rosemary involved…. Just subscribed to ImperfectFoods a few weeks ago. Admire what they’re doing. Admire what you’re doing, too! 😀

  4. Those enchiladas look really good! I’m even more impressed by how spotless your stovetop is! I can’t even seem to boil water without making a mess.

    My mom had the entire series of those cookbooks. I’m kicking myself for letting them, and many, many other books, go in my parents’ estate sale.

    If you have The Foods of Japan volume, the sukiyaki recipe is mighty good (at least I think Mom got the recipe from that book — my memory is not necessarily my best friend these days).
