Cowboy Day Cook-Along: Elvis Presley’s Quick Chicken Supper Skillet

Saturday is Cowboy Day! And to celebrate, Greg over at Recipes4Rebels coordinated the 3rd Cowboy Day Cook-Along.

I couldn’t find an actual “cowboy” dish, but I use the term “cowboy” loosely and I’ll take inspiration where I find it. So I selected a dish from Are You Hungry Tonight? Elvis’ Favorite Recipes, which is a favorite cookbook of mine.

I chose Elvis’ Quick Chicken Supper Skillet because next to it is picture of Elvis in cowboy drag from his role in a dramatic film called Charro!

The photo isn’t great. I was hosting some of Mr. Sauce’s friends, so I didn’t get a staged photo or anything. But this was tasty. And EASY. I’d equate it to some reaaaaaaly good rice-a-roni. It’s much better than Rice-a-roni, of course, but you catch my drift.

I served it with Elvis’ collard greens. I totally changed up the recipe, though. I made mine with smoked turkey necks, onion, garlic, Crystal Hot Sauce and a lot of this Bermudian sherry rum pepper sauce.

It is delicious. I have no idea where it came from, it was just in my fridge one day. It’s great with greens.

I topped off the dinner with a Strawberry Sunshine Pie, but I’m saving that for a later post while we ramp up for the 5th Annual PIEATHALON, which is taking place on Monday, August 20. So mark your calendars! 

I promise that this one is shaping up to be a banger. I have more than 20 bloggers participating!

  • This reminded me that I picked up a different Elvis cookbook about a year ago, but I haven't made anything from it. It's called Fit for a King: The Elvis Presley Cookbook. But mine doesn't have your recipe (which sounds really good!), so I probably need your book, too.

    • The best thing about this cookbook is pictures of random hot dogs and other sandwiches.

    What on God's green earth is rice-a-roni?

    • It's supposedly "the San Francisco treat," but it's really a combination of rice and pasta (vermicelli?) Per Wikipedia:

      "Rice-A-Roni is a product of PepsiCo's subsidiary the Quaker Oats Company. It is a pilaf-like boxed food mix that consists of rice, vermicelli pasta, and seasonings. To prepare, the rice and pasta are browned in butter, then water and seasonings are added and simmered until absorbed."

      The only thing I remember are the commercials, which made it sound soooo great. I'd always wonder why my parents ignored my requests to buy a box. I later read the sodium content and realized why. I can't get over the rice and vermicelli mixture. WHY?!?!?

      • The rice and vermicelli have slightly different textures, and the vermicelli gets nice and brown in the toasting step, so it has a yummy toasty flavor. I adored the stuff when I was a kid. My mom was a terrible cook, so if I saw a box of Rice-A-Roni, I knew at least one thing would be edible.
