WIENER WEDNESDAY: 203. Stuffed Franks

You are reading this because Mr. Sauce, Esq. pointed out I didn’t do a single Wiener Wednesday this summer.

And I want to give him a hearty thanks because, however neglectful I’ve been to the blog, I couldn’t let this year pass without an addition to the Wiener Wednesday archives. It would be wrong.

Plus, I’m knocking out another DiS1972 card!

And, with God as my witness, I will ONE DAY finish them all.

There’s just 30 (!) left to go.

Let’s delve into how I rationalized everything on the menu.

First things first, Chocolate Parfaits. What even is that supposed to be? I couldn’t find a definitive Chocolate Parfait recipe.  In the end, I just layered chocolate and vanilla pudding in glasses and popped them in the freezer.

I found this to be oddly delightful. Mr. Sauce, Esq. lamented that the parfaits were not just normal pudding. BUT IT SAID TO FREEZE THE PARFAITS.

Aside from freezing the parfaits and cooking the eggs, I didn’t follow the timeline at all.

I dropped the zucchini and cherry tomatoes because why do you need an extra veg when there’s spinach salad?

Speaking of spinach salad, there were no directions as to what kind of dressing. But it looked to be bacon with those hard-boiled eggs so I went Spinach Salad with Hot Bacon Dressing.

This is a personal favorite of mine. I remember a golf course in the area where I grew up (behind the Bob Evans?) that had this spinach salad on the menu. I loved it. My mother can tell you whether this is a fake memory.

For whatever reason, Spinach Salad with Hot Bacon Dressing YELLS 1970s. I never see it on a menu.

You can find any ol’ recipe online. They’re all the same. Mr. Sauce, Esq. never heard of this salad. And I don’t believe he tried it, either.

His loss.

Now I’m thinking about that weird Kraft Bacon & Tomato Dressing I made THREE YEARS AGO.

I swear it was just last summer.

Time flies. Yadda yadda yadda.

ANYWAY!

8 hotdogs is too many hot dogs. So I pared it down to 4. Therefore, there was way too much filling for the franks. Hence the little potato mounds (or at least I intended for them to be mounds) in the corners. Honestly, it’s just a giant blob.

So they baked. I tossed the salad. I toasted the muffins.

DINNER IS SERVED!

This wasn’t bad at all.

Who knew canned chiles, tomato sauce, and cheddar cheese would be good in mashed potatoes?

No lie. This combo worked.

Check out the little snow caps on the chocolate parfaits! So weird.

  1. I remember that dressing! I’d forgotten all about it, too – I’ll have to look for your version. I love BLTs, but hate cooking bacon, so I don’t get them very often. But I vaguely remember having that dressing on one, so I’m curious. Thanks for this!

Chili and cheese mashed potatoes sound fantastic — with or without hotdogs. My dad was a big fan of spinach salads with hot bacon dressing.

  3. In the ’80s there was a restaurant called Twickenham Station at the mall in my town. It was in an old railroad car and they had spinach salad with the hot bacon dressing. It was the reason I ate there. I’m going to have to make some soon.
