125. Herbed Pork Roast with Spaghetti Broccoli

I’m gonna make this post a quickie.
Why? Because this dinner was a quickie!

And why was this dinner such a quickie?

Not only did I mistakenly buy a pork tenderloin instead of a pork roast, I cut said 1-lb pork tenderloin in half (I am trying to avoid leftovers).

Therefore, Card 125. went from roasting for a couple of hours to a quick sear and 13 minutes in a 350 degree oven. Right before it went into the oven, I put a tbsp of apple jelly on top and half way through I basted.

I steamed the broccoli in the microwave while the pork was roasting. While the meat rested I cooked and drained the angel hair pasta and tossed it with the garlic, herbs, and wine.

Even with getting the water to a boil, rubbing the garlic and herbs into the pork, and cutting up the broccoli, this was all done in under 30 minutes.

And I will say that the pork was rather good. The apple jelly made a really nice glaze.

You may notice that my photo doesn’t include a gravy boat.

THAT IS BECAUSE THERE IS NO GRAVY IN THIS DISH.

Just when I think the culinary lunatics of Marjon Promotions can no longer find new ways to fuck with me (looking at you, evil bread bowls), they start randomly throwing in foods that DO NOT EXIST. I cannot photograph what never was.

P.S. I must admit that I wasn’t too bummed–I don’t own a gravy boat anyway.

P.P.S. Mum, please do not buy me a gravy boat for Christmas.

  • Respectfully posit that gravy bowl contains apple jelly— based on the convex surface of its textured (gelatinous?) contents 🤔 Please excuse this vintage cooking / tableware aficionado nerdy-ness blamed on cooking ALL the meals these last 8 months, straight 🙃 Wasn’t like this pre-home isolation, at all, I swear.
