One Stuffed Large Artichoke: The Elenian Club Cookbook (1985)

Spring is in full bloom and that means that it’s artichoke season!

We are very lucky in that we’ve been able to get our hands on fresh artichokes a few times during quarantine,  so I decided to continue my quest to recreate the stuffed artichokes that my dad will wax poetic about on occasion.

I chose this particular recipe because it is ONE STUFFED LARGE ARTICHOKE. Not “stuffed artichokes” or “artichokes stuffed with __________”

Just ONE STUFFED LARGE ARTICHOKE, which serves 6 (?!?!) people.

“I recommend this recipe. It was given to me by Mr. Louis G. Gruntz, Sr.–which he served at his son’s graduation.”

This recipe seemed to be exactly what I was looking for—but it was still lacking something.

We mentioned the artichokes to Mr. Sauce’s mom and Mother Sauce knew what was missing–a binding agent. Her family always added egg.  And she gave us the key to stuffing–starting at the outermost layers and then working inwards.

I don’t have a picture of this particular finished artichoke, but here is another one that we made at a later date with some lemon-broccoli pasta that Mr. Sauce made:

The artichokes are good! If you happen upon some, I recommend this recipe. Plus, the act of stuffing can be as time-consuming as you’d like it to be. I mean, we all have some time on our hands, right?

  • This looks/sounds really good! I've been scared to buy artichokes after finding a "friend" in one of mine...after cooking it and starting to eat it. Perhaps this will be the recipe that gets me to start buying them again!

    • Ew. I never thought about that. I soak mine in salt water so I always think that will get any "friends" out. LOL

      • I will have to try that. I've been traumatized. I have a huge phobia of slugs/snails so that experience was especially hellish for me. They had to go and ruin one of my favorite things to eat! 🤬

  • The artichoke in the pot is definitely Insta-worthy! YUM! Once I've gone through my current stores, I'll be off to find some artichokes. Of course, to serve 6, I'd have to find one the size of a basketball (who in the hell gets 6 servings from an artichoke???).
