Happy Fat Tuesday!*
I made a New Orleans classic for the occasion.
At least a “classic” is how it’s described in The Frugal Gourmet Cooks American**. It’s in the New Orleans chapter.
Never having this dish before, I had no idea what to expect (although don’t they sometimes call tartar sauce remoulade?)*** So I am going to assume that this is what The Frug intended:
When I asked Mr. Sauce, Esq. what he thought:
“Stop asking me. I’m eating it.”
Turns out he liked it because he asked if there was more.
Review from me:
Light. Refreshing. Would be perfect for summer. Maybe even a picnic. I guess for Fat Tuesday I should’ve gone for something more decadent, but whatevs!
To go with the salad I made a Parsnip & Carrot Soup (NYT recipe HERE), which is decidedly more winter/autumnal.
This was delicious. Made it exactly like the recipe.
OK, I got other stuff to do. TTYL, kittens!
*Today is a drinking high holy day, so I will not be going out tonight. **Yeah, I know that The Frug is problematic. ***OK, after the fact, I did a little research. It IS supposed to look like tartar sauce. Because the base is MAYO. Do you see mayo in this recipe? I don't think so.

Glad you dug out the Frugal Gourmet for this one! It was sad when I later heard the Frug had his issues, but the Gourmet was a staple cooking show that I watched in college and really helped get me started on my cooking journey. That and the little heard-of show called “Pasquale’s Kitchen Express”.
Anyway, as for the remoulade, I always think of it as an orange-tinted tartar sauce with a little kick to it. But as long as it tasted good, the Frug seemed to have tasty ingredients in his regardless of it’s official classification.
I KNOW! It was such a bummer when I heard that.
My brother was a big fan of the show. I have a copy of the Immigrant Ancestors cookbook that is well-loved. The recipe selection is solid and they are all rather easy.
I read the recipe 3 times looking for the mayo. 😉 Your salad looked good even mayo-less, though! Gonna have to get some parsnips to make that soup — YUM!
I’ve been fortunate to have eaten several versions of remoulade in The Big Easy whenever I visited my sister. I heartily recommend a “field trip” for you and Mr. Sauce, Esq. 🙂
We were in New Orleans last year for Mr. Sauce’s birthday (we did a big trip of the southeast). HE LOVED IT. It wasn’t my favorite spot on the trip, but I’d really like to go back and explore it more.
