This dish is part of my quest to complete all twelve Impossible Pie recipes from The Bisquick “No Time to Cook” Recipe Book.
The pie is extremely apropos because today is one of the best days of the year: National Cheeseburger Day!
And really, this Impossible Pie is just as one would imagine it would be: ground beef and cheese (which, let’s face it, is the base for the majority of these).
I made this pie on a random weeknight for myself with the intent to just eat the leftovers for the rest of the week. For lunches and dinners.
Which I did.
Which is maybe why I need to lose about 5 pounds. Like, STAT.
I mean, this ain’t the most health-conscious of meals. But it is cheap. And it is easy.
Much like yours truly.
First, I cooked the beef and the onions.
And then poured the Bisquick/Egg/Milk Mixture on top of it.
After Baking, I placed the sliced tomatoes on top.
And sprinkled it all with a healthy heap of cheese.
This was the end result.
The pie was designed for 6-8 servings, but I ended up with 9 due to my choice tomato slice placement.
Unlike the Impossible Taco Pie or the Impossible Lasagna Pie, there wasn’t a lot of flavor going on here. But, when accompanied by the regular ol’ burger condiments (especially a lot of mayo and pickle) this really did taste like a cheeseburger.
So tonight you should celebrate this hallowed day–if not with a burger proper, than this little casserole.
I’m a sucker for Bisquick’s impossible pies, so making a dozen different types sounds like a good project. (I’m not big on leftovers, so I have created a “just for one” Bisquick mix that I occasionally pour over a jumble of hopefully-compatible leftovers in a ramekin, top with cheese, bake, and eat. Don’t tell anybody because it sounds kind of sad….)
I love the way the other recipe includes a guide for pronouncing quesadilla.

Dagnabit! (it’s a word) I may have pizza tonight some fund raiser for Theata! (yes theater should always be spelled with an exclamation point.) If I wasn’t being life’s bitch right now I would so whip that up. I will have to save it for another time.
That actually looks pretty good. A few shots o Tabasco should liven it up.
