Caviar Canape Pie (1950 & 1980) and Caviar Stuffed Eggs

Oh my gawd yinz guys. I am unbelievably stoked. In June, for my mum’s birthday, we are seeing Countess Luann of Real Housewives of New York City fame bring her cabaret show, #CountessAndFriends to DC*******

According to the poster, her show is sublime! Captivating! Profound! 

I am dying to know what records this show broke!

Vanity Fair said: I say this with no irony or cynicism intended: book these two for your Bar Mitzvah. The energy was infectious and literally every person in the room will love it!! Even dad!

From Vulture: Luann first appears onstage 20 minutes after her 9:30 p.m. showtime, resplendent in a floor-length shimmery silver gown with a plunging neckline and black gloves nearly to her elbows. The cheers are riotous…every one of the 150 or so people around me, I am full-on, Beatlemania screaming.

All I know is that it will take every ounce of restraint for me to not stand up and yell like Dorinda.

P.S. I wish I had enough money to buy Dorinda’s Jovani sequin jumpsuit.

********Super-sadly, Luann has to go to court in FL on May 23rd because she violated her probation.

To quote my mother’s text from yesterday: “I am so pissed at the Countess right now…that bitch.”

Anyway, thinking about The Countess, I cued up a few older eps of RHONY, including Season 6, Episode 6 “Unhappy Anniversary.”

In this one, some of the ladies attended a Petrossian caviar party in a private dining room, served by the Petrossian Caviar Girl. She looks like she’s selling hot dogs at the ball park, but her tray happens to carry 4 different types of caviar and vodka shots in test tubes.

Is that a boat on her head? I need to go find out for myself!!!

(I did a little research and sadly, Petrossian New York closed in 2017.)

OK. Now to the main event–the Caviar Cheese Pie!

We had a pie party at the office back in March and this was my offering.

I combined two different recipes, one from 1950 and one from 1980

Dishes from these 2 have appeared on the blog before: Igloo Canapes and Fried Gruyere Balls.

I loved the idea of this one, but I really didn’t want to have to cut a big, round rye loaf (and let’s face it–I wouldn’t be able to find one). And all those fish spreads wouldn’t really go over well with my work crowd, so I combined that recipe with this one:


I was especially a fan of this recipe because it used a refrigerated pie crust.

I applaud my artistry.

Also, this was yummy. Totally a lox platter but without the lox. 100% would make again. And caviar is just tiny balls….

And I promised to share with you my Easter feast–so here is one of my snicky-snacks–caviar-stuffed eggs just a deviled egg but instead of mustard, yellow caviar.
