Bisquick Impossible Pies: Zucchini-Tomato Pie

So, it turned out that I didn’t make all 12 the Bisquick Impossible Pies from The Bisquick “No Time To Cook Recipe Book” (1983) like I thought I did. I don’t know how I missed one, but I did–Zucchini-Tomato Pie.

I love me an Impossible pie. I say this to Impossible Pies:

That is, except for the Brownie Pie.

Brownie Pie can suck it.

This recipe has been sitting around, unmade for 4 years.

But I finally remedied that. Here it is:

How you like that garnish?

This was pretty damn good.  It had a more substantial “pie crust” part at the bottom of it. Maybe because I used Gluten-Free Bisquick (and put in more than the recipe called for)?

And it was totally pizza-ish. I sprinkled some oregano and red pepper flakes on the leftovers and it totally tasted like pizza.

So there you have it! All TWELVE of the Bisquick Impossible Pies!

  1. SO…you inspired me! This weekend Chris was in town so I made the Taco Pie and he said he liked it. Plated on a bed of shredded lettuce and green onions on top of his, avocado, green onion, black olives and tomato on mine. Served with refried beans and guac and chips! Then Sunday morning I made the Sausage Breakfast Pie and Chris had 3 helpings! I bought apples to make the French Apple Pie but Chris wanted brownies so there is already too much dessert in my house.

      I’m glad that the Taco Pie was a success.
      I need the recipe for the sausage breakfast one–Mr. Sauce would LOVE that!

  2. That’s so pretty! I have a soft spot for Bisquick’s impossible pie recipes, even though I’ve only ever made the impossible pumpkin pie.
