Jon Voight’s Artichokes, California-Style

Round ’em up, little dogies! National Day of the Cowboy is July 24th!

In honor of the occasion, Greg over at Recipes For Rebels (also the name of his James Dean-themed cookbook) decided to host an ol’ fashioned cook-along blog-along hootenanny. He was nice enough to invite me over to whip up a dish.

Although we were encouraged to follow a menu specifically designed for the day, the only real rule is that the dish had to be cowboy-themed.

But it wasn’t explicitly stated that it had to be any particular type of cowboy, so why not a Midnight Cowboy?

These were delicious. You could argue that marinated artichokes come in jars or you can get the same sort of thing at the olive bar at the grocery store, but no. You can’t. Not like these. I loved that they were cold and marinated but were eaten the same way you would a hot, steamed artichoke and dip the leaves in butter. This is like that. I would totally make these again. If artichokes were ever less than $3.99/ea. I mean, these artichokes were almost as big as my head, but still.

I also made Old Borunda Cafe’s Enchiladas Montadas from the Cowboy Menu.

This was labor-intensive because the enchilada sauce is made from scratch, but this was really good. And Since I only made 4 enchiladas, I have extra red sauce in the freezer.

  1. Cor! I fancy some of those artichokes, and the enchiladas too… Must stop reading all the cowboy cookalong posts BEFORE my lunch. Stomach is rumbling like the hungriest cowboy in the world… Mmm.

  2. Great! The artichokes look delicious! I have to try this sometime (because they’re NOT $3.99/each here, in season…which means waiting until next Spring)! Love the posting! Midnight Cowboy was a perfect match for you!
