Velveeta South of the Border Dip

Hello, darlings. I threw myself a big birthday party!

And I made a ton of dishes from my cookbook collection for the occasion. It was a hefty spread and I am looking forward to sharing them with you.

But I guess I wasn’t looking forward to it that much because I’m an Aquarius. That means that my birthday is in January. I threw a big birthday/housewarming party for myself at the end of January and I haven’t gotten around to writing about it until now. In July.

But better late than never, eh?

I’m going to close out the month with my birthday party dishes and then I gotta get cooking again. Seriously, I’m almost out of things to write about. I may have to do another readers’ choice poll.

Without further ado, Velveeta South of the Border Dip!

Fresh Ideas

This little pamphlet was given to me by my mum’s best friend from high school. At first I thought, ooooh asparagus with cheese. But then the more I look at it, the more it looks like some sort of alien hand. Or Swamp Thing’s hand! Man, I haven’t thought about that movie in ages. It played all the time on HBO when I was a kid. I liked Swamp Thingswampthing

However, the thing that I remember most is that every time it was on, my parents would refer to Adrienne Barbeau as “Tits Barbeau.”

OK, back to the dip…

They do not offer Jalepeno Velveeta at my local grocer, so I went with the original (of which they only had the GIANT box) and added a can of diced chiles and instead of just regular tomatoes I went with RO-TEL or whatever brand it is that has the chiles mixed in with the tomatoes.

What was nice is that I just made it all my fondue pot to keep the South of the Border Dip at a nice, melty temperature all night long.

south of the border dipThis shit was good. OF COURSE IT WAS! It’s nacho cheese.

And it went fast. I actually ended up cubing the rest of the giant box of Velveeta (good thing I had the giant box) and dumping it into the fondue pot with a jar of salsa. Shit was still good.

  1. That’s still a pretty popular dip at parties here in the Mid-South! We call it Rotel Dip in my hometown. I have probably made this dish a hundred times in my life. It’s pretty darned good.

  2. I like Velveeta way more than a reasonable person should! I keep hearing that it’s great with Ro-Tel, but I have yet to try it that way for some reason. Maybe you will inspire me to go for it.

  3. Yeah I don’t know why Velveeta only comes in the big government cheese box. And let me tell you shipping that crap is NOT Cheep, especially when shipping to Afghanistan, friend in the war, asked for it. What we do for our people in the service. I love to put the brick in the crock pot with a can of turkey chilly because kidney beans are the devil. that is to use and old turn of phrase “da bomb” I only bring that recipe out at pot lucks because the stuff is like crack and I don’t need to be eating like that.
