Impossible Lasagna Pie

My darlings!

I am so sorry that I’ve been AWOL. I went on a week-long vacation at the end of September with my mum’ and between recovering from my trip and catching up on work, I have neglected the blog. I hope that in the next couple of weeks I can get back on track and bring you tons and tons of retro food madness.

So here’s a place to start!

Since back in the day when I made Impossible Taco Pie, I have become a little obsessed with the Bisquick Impossible Pies. I mean, they’re like magic–that whole “the crust makes itself!” thing (at least in theory. So far the crust has never fully formed). But the first one was so damn easy and so damn tasty!

There is a little booklet from 1982 called The Bisquick “No Time to Cook” Recipe Book featuring Impossible Pies that I am constantly looking at and thinking: that’s the one I should make next. No, that one. Maybe that one?

I want to make. them. all.

Well, I think that anytime has the potential to be the perfect time for an Impossible Pie, but this time was a perfect time–my friend Richard’s birthday! What says happy birthday! more than a one-dish miracle meal?

The only change I made to the Lasagne Pie was that I added some fennel seeds and some red pepper flakes to make this taste a little more like Italian sausage. And I also baked it a little longer because I wanted to get the cheese all browned and bubbly.

I think that the picture speaks for itself and makes it rather obvious–this was delicious!Lasagna pieWith a little side salad and some of that frozen garlic bread, this was a treat.

And it did taste pretty much like a lasagna or a pasta bake–but without the hassle of cooking and draining noodles. This one gets 2 thumbs up from me!

Also that evening we watched Lovelace (a biopic about Linda Lovelace, the star of the infamous porno flick Deep Throat). It was by no means a bad movie (it had an all-star cast!), but it skewed a little more Lifetime than full-fledged theatrical release (we were watching it VOD). The whole time I kept thinking, what would this have been like if Lindsay Lohan had been playing Linda instead of Amanda Seyfried? It’s a shame that fell through. I am still morbidly curious about The Canyons.

OK, so I am sorry that this was a dinky post, but like if you go to the gym all the time and then you stop, I’m easing my way back in. I hope to have another post for you by the end of the week.

I may not look particularly thrilled in this picture, but believe me when I say that I was. I truly was.
